Jacketed Kettle Heating Methods
1. Steam Heated Jacketed Kettle: using the steam heat to heat the kettle body.
Features: Gentle temperature, generally 100℃~130℃; Even heating, preventing localized scorching; Rapid heating, low cost;
Requires a boiler or steam source; Suitable for simmering soups, braising, making porridge, cooking meat, pre-cooking, sauce making, and processing bean products.
2. Electric Heated Jacketed Kettle (Heat Transfer Oil): Electric heating elements heat the heat transfer oil in the jacket,
and the oil temperature is evenly transferred to the kettle body for indirect heating.
Features: Stable temperature, automatic temperature control (0~230℃); No boiler required, simply plug in electricity;
Even heating, prevents scorching; Clean and hygienic, no open flame; Suitable for: Food factories, canteens, braised food shops, sauce,
red bean paste, and syrup making without a boiler.
3. Gas fired Jacketed Kettle (Natural Gas/Liquefied Petroleum Gas)
Bottom/side gas burners directly heat the jacketed kettle.
Features: High heat output, fastest heating; lower operating cost than electricity;
adjustable heat output; requires gas pipeline or cylinder.
Suitable for: Central kitchens with high production volumes and efficiency requirements; braising, stewing, and stir-frying.
4. Electromagnetically Heated Jacketed Kettle
Electromagnetic induction heats the kettle itself, resulting in extremely high thermal efficiency.
Features: Rapid heating, precise temperature control; no open flame, no exhaust fumes,
safe and environmentally friendly; clean and easy to clean, suitable for high-standard workshops;
slightly higher initial cost, but long-term energy savings. Suitable for high-end food factories,
cleanrooms, and the production of donkey-hide gelatin, pastes, and high-viscosity materials.
